Penne Pasta with Marinara

SERVES 3 | FINISH IN 15 minutes
   


Ingredients

Marinara Sauce

  • 1 tablespoon olive oil
  • ½ yellow onion, diced
  • 3 cloves garlic, minced
  • 28 ounce can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 2 tablespoons minced fresh parsley or basil

Pasta

  • 1 package Veggiecraft Penne
  • Grated Parmesan cheese, for garnish
  • Chopped fresh basil, for garnish
Directions
  1. Make the marinara sauce. Heat the olive oil in a large pot over medium heat. Add the onion and sauté for 5 minutes, until beginning to soften. Add the garlic and cook 30 seconds. Add the tomatoes, oregano, salt and pepper. Bring to a boil then reduce heat and simmer partially covered for 15 minutes. Turn off the heat and stir in the fresh parsley or basil.
  2. Cook the pasta according to the package directions. Drain and rinse well. Then return the pasta to the pot.
  3. Pour the marinara sauce into the pot with the pasta and toss well.
  4. Serve with a garnish of fresh basil and grated parmesan.
