Rotini with Sausage & Fried Sage

SERVES 8-10 | FINISH IN 45 minutes
   


Ingredients
  • 1 Box Veggiecraft Cauliflower Rotini
  • 16 Sage Leaves
  • 1 Tablespoon Butter
  • 1 Tablespoon Olive Oil
  • 8 Ounces Hot Italian Sausage, cut into chunks
  • 1 Cup Beef or Chicken Stock
  • Coarse Sea Salt and Freshly Ground Pepper, to taste
  • ¼ Cup Grated Parmesan

Directions
  1. In a large pot, bring 4-6 quarts of water to a boil for the rotini.
  2. Heat the butter in a large skillet over medium low heat. Add the sage and fry slowly until the leaves are crisp. Transfer to paper towels to drain.
  3. Add the oil and sausage to the pan and bring the heat to medium. Sauté until the pieces are browned. Remove the sausage from the pan and set aside.
  4. Add the stock to the skillet and use a wooden spoon to scrape any particles from the bottom. Simmer over high heat until the stock is reduced by half.
  5. Cook the rotini according to the package directions.
  6. Transfer the rotini to the skillet with the stock and add back the sausage. Toss to combine.
  7. Serve with a sprinkle of parmesan and topped with the sage leaves.
