Rotini with Sausage & Fried Sage
SERVES 8-10 | FINISH IN 45 minutes
Ingredients
- 1 Box Veggiecraft Cauliflower Rotini
- 16 Sage Leaves
- 1 Tablespoon Butter
- 1 Tablespoon Olive Oil
- 8 Ounces Hot Italian Sausage, cut into chunks
- 1 Cup Beef or Chicken Stock
- Coarse Sea Salt and Freshly Ground Pepper, to taste
- ¼ Cup Grated Parmesan
Directions
- In a large pot, bring 4-6 quarts of water to a boil for the rotini.
- Heat the butter in a large skillet over medium low heat. Add the sage and fry slowly until the leaves are crisp. Transfer to paper towels to drain.
- Add the oil and sausage to the pan and bring the heat to medium. Sauté until the pieces are browned. Remove the sausage from the pan and set aside.
- Add the stock to the skillet and use a wooden spoon to scrape any particles from the bottom. Simmer over high heat until the stock is reduced by half.
- Cook the rotini according to the package directions.
- Transfer the rotini to the skillet with the stock and add back the sausage. Toss to combine.
- Serve with a sprinkle of parmesan and topped with the sage leaves.
